From one of my very first ever live demos,
I made this pasta for my fall Internship class launch party. I made this pasta for Murphy's Beans N'Dreams lauch patry, where I was the executive pastry chef.

It's sure to be your go to fresh pasta recipe, and the best part is it takes under 30 mins to throw the whole dish together, and can be made in your food processor.
Recipe
2 Cups of AP flour, or semolina flour
1/2 Cup of extra flour (AP or semolina flour)
1/2 tspn salt, kosher
3-5 eggs
Two premade sauces, of your choice... I used Alfredo and basic marinara
Procedure
Put a pot of boiling water on medium heat, salt the water well and allow to come to a simmer.
Start by putting your flour and salt together in your food processor, pulse the two together.
Add an egg at a time, if it doesn't come together after the addition of three eggs, you can add the next egg, up to 5 total until a dough forms.
Carefully (avoiding the blade) remove the dough and kneed until smooth and piable, about 3-5 minutes (until it doesn't spring back quickly when you press down with your thumb).
Chill the dough for 15 minutes.
While the dough chills put your sauce into a saucepan on low heat, season to taste adding fresh minced garlic, dried herbs, salt and pepper (last).
In the last 3 minutes of the dough resting bring you water to a boil, and keep it as so until you add the pasta.
Shape your pasta using a pasta machine going from thickest to thin, the dough should be transparent when held up to light, but not super thin to where it might break.
Cook your pasta until it floats to the top of your boiling water, reserve a Cup of the liquid from the pasta's cooking water, put to the side.
Heat both sauces to medium heat, have someone help manage one and add 1/2 Cup of the pasta cooking water to each saucepan.
Finish by adding the pasta to the sauces using tongs and played with your favorite hard cheese, such as parmesan or Asiago.
