Sharp cheddar, chive, and bacon Mac and cheese

This recipe comes by request on my Instagram page @cheftobe360 where I made this pasta for lunch and held a vote if I should share the recipe or not...

Well here it is, warning... You might get addicted. This pasta is certainly not for those on a strict "diet", it creamy, rich and super cheesy. It's also made with whole grain pasta so it's not too bad for you (wink), enjoy this dish at you week night dinners, lunch or special event. This recipe is sure to be a crowd pleaser.

Ingredients 2 tbsp butter ½, 1 small onion ¼ c of AP flour 1 C of whole milk, plus ¼ adjustment of sauce consistency ⅓ C heavy cream 2 tspn of Adobo (with black pepper) ½ C of water Mix ½ (... oz) box of cooked ehole grain Pasta 3 stalks Chopped chives, 1 tspn reserved

Procedure

  1. Mix the cooked pasta and chives in a medium- large bowl.

2. In a medium pot, cook the onions until they sweat and are translucent in color, transfer the cooked onions into the pasta and fold it in, set aside

3. In the same pot you cooked your onions cook your bacon until crisp then remove the bacon and chop half, reserving the other half for garnish.

Don't remove the bacon grease, it will add flavor and has use to the sauces consistency.

4. Put one half of the bacon bacon in the pot and set the other half aside for garnish.

5. Add the butter and flour to the bacon, this will form what is called a roux, a combination of half butter half flour which is cooked. The roux will help our sauce thicken as the flour is glutenous.

6. Whisk together the heavy cream, 1 C of the milk and water, then whisk it into your roux until the flour and butter mixture is smooth and cooked into the cream, do this on medium- low heat.

7. Season the sauce with adobo and whisk in the cheddar cheese.

8. Once your sauce thickens and flow like hot lava coat your pasta in the bowl with the sauce, fold it in so you keep the structural integrity of your pasta and sauce

9. Cook together in the pot for 2-3 minutes, this help to really coat the pasta in the sauce.

10. Plate the sauce the garnish with the bacon and any leftover chives.
